Dessert Thursday

I love dessert, I guess because when you need that pick me up, it is right there.  Even better when you can have it for breakfast, right?  I notice now that even though our days may fly by, I realize that embarking on this journey has helped me to see, what influences my grandmother has had on me.  I know this for sure, I could not have made this journey without my her and you, and this has been the best experience of my life.  I guess you may call it my dessert.



It's that time for another dessert, and when it comes to having a breakfast inspired treat never fail to appreciate the power of a good coffee cake. I really believe that a good coffee cake  can make the sun shine brighter, birds sing more beautifully, and put a hop back into your step.  




This is that one type of cake that is the perfect twist on the classic while always giving you the aloha feeling you may be seeking.   This is the one coffee cake to have in your repertoire that will let you wow your friends.  






What is so wonderful about sharing this is that there's a whole world out there beyond the typical and expected morning treat.  When you need to decide what you want, there is new inspiration here for the days when you're ready to retire your boring breakfast cereal or decide to skip a morning at the gym, you just maybe might pass up the loco moco. 


This coffee cake can win you friends and may even help influence people. This may even help convince those no-coconut fans they may actually like it.  


Hawaiian Coffee Cake


3 cups  flour
5 tsp. baking powder
1 tsp. salt
1 cup sugar
2eggs, beaten  
2 cups crushed pineapple
1/2 cup oil 


TOPPING:
1 cup coconut
1 cup brown sugar
4 tbsp. flour
4 tbsp. butter



  1. In a bowl blend flour, baking power, salt and sugar.  Then add pineapple, eggs and  oil mixture to flour mixture.
  2. In another bowl  mix coconut, brown sugar, and flour then cut in butter to form crumbs.
  3. Pour batter into greased 9 x 13 inch pan, place crumbs on top. Place in  375 degree oven  and bake 25 minutes or until tests done.
