This coffee cake can win you friends and may even help influence people. This may even help convince those no-coconut fans they may actually like it.
Hawaiian Coffee Cake
3 cups flour
5 tsp. baking powder
1 tsp. salt
1 cup sugar
2eggs, beaten
2 cups crushed pineapple
1/2 cup oil
TOPPING:
1 cup coconut
1 cup brown sugar
4 tbsp. flour
4 tbsp. butter
- In a bowl blend flour, baking power, salt and sugar. Then add pineapple, eggs and oil mixture to flour mixture.
- In another bowl mix coconut, brown sugar, and flour then cut in butter to form crumbs.
- Pour batter into greased 9 x 13 inch pan, place crumbs on top. Place in 375 degree oven and bake 25 minutes or until tests done.
