Main Dish Monday

You would think that Tony Archer was the only person was the only person that could come to the state of Hawaii and bring in some Italian food.  As we all know Danny is from the east coast and he never lets us forget his cravings for the food he left behind.  


Though, I must say, unfortunately his reputation has suffered greatly and I do believe there is one Navy Seal that will never be able to look at a frittata again(well we will have to see about that).   


I believe he will have to work on it, and work on it he will even if it kills him, since he will eventually have to impress the Zen Cargo Master. But alas it should not be a complicated dish, but enough to make
the naysayers sit back and take notice.  So maybe the next time you are at a work function and the big guy is hungry, you can step up to the plate and make him eat his words.  Which by all accounts is not an easy thing to do, but our Danno does like a challenge.

So Danny boy get your sleeves rolled up, because this  chicken dish is fresh, simple, tasty, and ready to make you look good. 

Caprese Chicken



4 lbs- boneless skinless chicken breast
1 Tsp Italian Seasoning
1/2 Tsp salt
grated peel of entire lemon
1 lemon juiced
1Tbsp olive oil
1 Tsp Balsamic Vinegar
1 large plum tomato cut into 8 slices
1/2 cup mozzarella shredded
1/4 cup basil chopped
Linguine cooked to serve 4




  1.  Between pieces of wax paper place chicken breast and gently pound with mallet or rolling pin until approximately 1/2 inch thick.  Then in a small bowl, mix Italian seasoning, salt, 1/2 Tsp grated lemon peel, then divide over one side of chicken rub well.
  2. In a large nonstick skillet, heat oil and vinegar over medium heat then place chicken in seasoned side down; cook 8-10 minutes turning once.
  3. Reduce heat to low.  Top each breast with 2 slices of tomato and divide the mozzarella and sprinkle on chicken. Cover and cook 2 minutes longer.  
  4. Toss linguine with olive oil, lemon juice and lemon zest.  Divide among the plates top with chicken and serve.
The results can be be absolutely impressive, don't you think?  Enjoy!
