Thinking we need Coffee and Dessert


It has been a great week and let me tell you, and still talking about what a great show Monday night's premiere was.  We can dissect for weeks to come, what plot twists will they have in store for us?  Let's face it, we may get it right, like Adam saving Kono, but really mama McG letting WoFat go and the look on his face, damn priceless, and why? 


We can chat, blog into the night and start it all over again, and just have more questions.  You will still be exhausted continue online chats with people all over the globe, especially those you just met, and still not have the answers.  Though you may be in need of some coffee and major treats.  When I brought that up the other day I was reminded that I was the one who had some expertise in this area.  So I thought for a moment and rattled off chocolate crumb cake, mocha brownies, all seemed acceptable with our almost 6000 mile coffee rendezvous.

So what do you think, you just found the mother you haven't seen in 20 years, she is still alive, and guess what she can still hand out the discipline to you and your partner. 






She can even try to finagle her way into your dating relationship (yeah that one is rough).  


 The worst part she is spilling the beans about your GI Joe fetish growing up and the fact you wore footie camouflage pajamas. So maybe before she disappears you get her possibly to bake you some treats, something little Stevie use to like, or something the big kahuna might enjoy today.                                          

    

Well I think today I might be able to address everyone's childhood and adult dessert needs.  Hope you enjoy today's choices.


Chocolate Crumb Cake 


To any box chocolate cake mix:
4 Eggs. 
1/3 cup oil 
1 cup sour cream
1/4 cup of water

Crumb Topping

2 1/2 Cups flour
1/2 Cup sugar
1/2 Cup brown sugar
2 Tbsp cinnamon
1 Cup butter, softened



  1. Mix cake according to package directions using a prepared greased and floured 9"x13" pan.  
  2. Prepare crumbs, using a fork or your fingers (I find fingers work best), sprinkle this mixture on cake and bake 35-45 minutes until tested done.
  3. When the cake is completely cooled sprinkle with powdered sugar, or melt chocolate chip morsels and drizzle on top.

Mocha Brownies 

3 squares unsweetened chocolate, melted
2 Tbsp instant coffee powder
1 1/2 cups flour, 
1 tsp baking powder
1-1/2 teaspoons salt
1 cup cup butter, softened
2 cups sugar
4 eggs
1/2 cup chopped pecans

  1. Preheat oven to 350°. 
  2. Blend melted chocolate with coffee; set aside to cool. Into another bowl mix flour,  baking powder and salt. 
  3. Then in another bowl cream butter until light and fluffy, gradually add sugar. Then add eggs; beat until well blended. Stir in chocolate and coffee mixture; blend in flour mixture, then stir in chopped nuts; mix well. 
  4. Spread batter in a greased and floured 13 x 9 inch pan. Bake 30 to 40 minutes, or until done. 
  5. Turn out onto rack to cool.
