Day 9 Main Course Tuesday

Day 9 and we are entering into main course Tuesday, think we need something substantial after last night's amazing Hawaii 5-0 episode. Now just going to truly cut to the chase after a that show has left most of us speechless, how do i go on? Go on, though I must, even if I am completely exhausted because I spent most of the time on the edge of my seat (thanks Mr. Lenkov).  So cooking tonight should be able to meet the challenge of simple, easy to prepare but offer the flavors of home style cooking.  

Monkey has totally inspired this dish because I really think it is kid friendly, and well, her and Danno (yeah I said it what are you going to do?) to enjoy.  Now with him being a single dad needing to make his monkey a hearty dinner (maybe really not being able to cook), this is a really easy and great tasting meal.  There is even enough if uncle Steve shows up to hang out and watch TV with our favorite dad and his girl.

Monkey's Chicken Noodle Bake

  • 1 package Extra Wide Egg Noodles
    1 Can cream of chicken soup
    1 cup milk
    salt and pepper to taste
    2 tsp chopped parsley (or 1tsp dry)
    2 tsp fresh chopped thyme (or 1tsp dry
    1 cup shredded cheddar cheese
    1- 8oz package sliced mushrooms sautéed 
    (or can of sliced mushrooms)
    1- rotisserie chicken

    TOPPING

    2 tablespoons butter, melted
    1 cup plain breadcrumbs (Panko is my favorite)
    1 teaspoon fresh chopped parsley
    1/2 cup shredded cheddar cheese

    1)     Preheat oven to 350. Spray a 9x13 baking dish with nonstick spray. Cook noodles according to package directions; drain.
    2)     Combine soup and milk in a large mixing bowl;whisk until smooth.
    3)     Stir in parsley, thyme, salt and pepper to taste, 1 cup cheese. 
    4)     Cut chicken from bone and coarsely chop. Discard skin and bones; add chicken to soup-cheese mixture, fold in cooked noodles. 
    5)     Spoon into prepared baking dish. Cover with foil and bake 20 minutes, meanwhile mix topping and set aside.  Sprinkle with topping and bake, uncovered, 10-15 minutes or until hot and cheese is melted crumbs start to brown.
