Miscellaneous Mondays

Mondays is back upon us again and why do we love Monday's oh yeah Hawaii 5-0.  Oh the downside of Hawaii 5-0 in winter (there is a small one) is we realize we need to get back into bikini shape to be hanging along side some of our favorite guys. So as most Monday's begin we start to think about eating better. making wiser choices (like those phrases better). So thought today's recipe could accompany the healthy life style our H50 ohana inspire within us. So lets face it if Steve and Chin were catching dinner, guess we might need something healthy to accompany our main course.


Diamond Mediterranean Salad

  • 3 vine ripe tomatoes, cut into chunks
  • 1 red onion, thinly sliced
  • 1/2 European seedless cucumber, cut into bite-size chunks
  • 1 small red bell pepper, seeded and cut in chunks 
  • 1 small green bell pepper, seeded and cut in chunks
  • 1 cup Kalamata black olives/1 -(5 ounces) jar pitted Kalamata Olives
  • 1 (4 ounces) package Feta Cheese, crumbled
  • Lettuce
  • 20 ounces Lettuce Leaves 
Vinaigrette Dressing

          ·         6 tablespoons Olive Oil
          ·         1 teaspoon Garlic Powder
          ·         1 teaspoon Dried Oregano
          ·         1 teaspoon Dried Basil
          ·         1 teaspoon Dijon Mustard
          ·         1 teaspoon Fresh Lemon Juice
             ·         1 1/2 cups Red Wine Vinegar



  1. Add chopped cucumber, chopped tomato, Kalamata olives, feta cheese, sliced red onion, romaine lettuce, and baby greens to large serving bowl. 
  2. Mix dressing in a small bowl, whisk olive oil, garlic powder, dried oregano, dried basil, Dijon mustard, fresh lemon juice, and red wine vinegar. Serve along side or toss with salad the choice is yours enjoy!
