Happy Hour Friday

The need for hanging out with friends is never more apparent then when everything seems to snowball out of control, it can be difficult to remain encouraged at work and in life. Yes it is so true, we all go through, periods in our lives of highs and lows, getting through the low points in our lives may be difficult, it is those friends, our ohana that we rely on to pull us through.   They help us to remain upbeat, encouraged even if the walls are falling down there may be that glimmer of light, and this, that hope, may bring that bit of smile to your face, lessen some of that pain around you.


Your friends can help you overcome any low point you face in life.  So celebrate those friends like a cherished treasure you hold dear.  Like I have said is it no wonder we find comfort in food, it is Friday lets indulge in a little of both for this Happy Hour what do you say?

Another week down and we have pretty much come through it unscathed.  I once heard "life may not be the party we hoped for, but while we're here we should dance."  I think we danced with Steve  this week, he didn't sign on to be a chef, though he did rise to the occasion.  I am thinking now we should probably have a challenge between Steve and Danny, an Iron Chef style cook-off  to see who is the master of his culinary domain.  Though, is it me or is there a little something familiar about the Chairman, can't quite put my finger on it.                                               







Oh but I do digress, it is as we all know Friday, and McCargo does need to end this week with his own little celebration.  Though some may not have recovered from yesterday, I hope those ladies are on their feet for later, cause rumor has it, there is a party at the McGarrett house.




The theme for Happy Hour is Hawaiian, from the cocktail to the food.  Though the punch may be an old inspiration the food is inspired by the flavors of the island.  





Hawaiian Punch

3 oz rum
3 oz vodka
3 oz  almond liqueur
3 oz creme de bananes
12 oz orange juice
12 oz pineapple juice
9 oz grenadine syrup

Pour in picture over ice, add the grenadine last, and stir. ENJOY! 


Spicy Hawaiian Style Chicken Wings

¼ tsp Cayenne Pepper                            3 Tbsp Hoisin Sauce
¼ tsp Ground Coriander                        1 Tbsp Pineapple Juice
½ tsp Salt                                                 1 Tbsp Low-sodium Soy Sauce
1 tsp Chinese 5-spice Powder                2 tsp Packed Light Brown Sugar
3 lbs Chicken Wings, tips removed      5    Scallions, green part only, finely diced

  1.  Preheat oven to 400°F. Coat a baking dish with cooking spray.
  2. In a large bowl, combine Cayenne, salt, coriander and 5-spice powder. Toss wings with dry spices and let rest for 15 minutes.
  3.  In a small bowl combine remaining ingredients; reserve.
  4. Arrange chicken wings in a single layer in baking dish and bake for 10 minutes (or you may grill on med/high for 10-12min), then brush with some reserved sauce. Turn wings over, brush with more sauce. 
  5. Bake or grill you can  12 minutes or till desired crispness. Sprinkle with scallions.
 Hawaiian pizza is one of the most popular pizza flavors around (maybe not no much in my neck of the woods). This is a twist on the actual pizza using pita as the crust, and the pineapple can be fresh or canned.   

Kelela's Hawaiian Pizza 
4- pita bread
2 cups of your favorite tomato sauce 
1-15 oz can pineapples, diced (or fresh pineapple)
1/4lb ham from deli sliced then cut in ribbon
1- 8oz bag  shredded mozzarella cheese

  1. Preheat oven to 400 F., place pita bread on a flat oven-safe tray. 
  2. Spread some tomato sauce evenly over the pita bread using the back spoon. 
  3. Arrange pineapples and ham evenly all over the pita bread, followed by a layer of cheese, followed by more pineapples & ham over the cheese. 
  4. Bake for about 8-10 minutes, or until the cheese has melted.

  2. I have to admit I am with Danno on this one, but find myself like him in the minority. So if you can't beat them, attempt to join them (just don't let your Italian grandma find out).
